I love the idea of stuffed baked potatoes but can’t be bothered with the long cooking time or making things look nice and neat. This is my lazy man’s version of stuffed baked potatoes… with added zip!
Step: 1
Preheat oven to 375 degrees F (190 degrees C).
Step: 2
Prick potatoes several times with a fork and place into a microwave-safe dish. Microwave until fork-tender, 5 to 7 minutes.
Step: 3
Place potatoes on a flat work surface. Slice each potato in half; scoop out the flesh into a bowl, leaving only the skins. Flatten the skins into a single layer in an 8-inch baking pan.
Step: 4
Mash the potato flesh. Mix in eggs, Cheddar cheese, butter, green onion, garlic, turmeric, paprika, red pepper flakes, salt, and pepper. Layer the mixture over the potato skins.
Step: 5
Bake in the preheated oven until bubbly and lightly browned on top, about 20 minutes.

Getting stay in and cook your food instead of eat in the evening out is good a process in the best direction if you’re focusing on eating healthier. There’s no better way to know exactly what’s going into the food you’re eat than by making it yourself! Mastering the main dish is only half the battle , like that . And once you’ve perfected your chicken, steak, or fish, it’s time to turn your attention to the ever- focusing side dishes.
A side dish can easily make down of your health goals, as sweetness , sodium, fat, and calories would all get rather high quickly if you’re not careful . But with our good practise of cook on side dish recipes, you won’t ever run into that problem .
