Ethiopian Spiced Cottage Cheese with Greens (Gomen Kitfo)

This is an Ethiopian recipe that is slightly altered to better accommodate ingredients commonly available in the US. Use spinach if you prefer; and if you can’t find cardamom, just leave it out. I first made this for a school project in junior high.

The most obvious way to choose a side dish is to look at your main dish (pasta, chicken, seared tofu) and choose something different. When you’re making pasta, make sure for a simple vegetable . Made steak? Go for something light. If you’re making stir-fry with rice, it must not a best idea to also make a rice salad.

One make sure is also can apply to cooking process . You don’t want to push more often your oven by making to do list three dishes at once in there, or be rounding four pans on the stovetop . But often you can make a dish do double-duty .
